I added the red wine to the sauce and mixed. I tasted to see if the sauce tasted sour. This would negatively influence the final taste and is due to the acidity of the tomatoes and wine.

If it tastes sour, add sugar. From 1 teaspoon to 1 tablespoon, until you get good taste.

I put the fried meatballs in the sauce and I boiled them for about 15 minutes on low-medium heat, until the sauce started to thicken.

Once ready, allow to cool for at least two hours before serving.

Spanakopita (spinach pie)

Ingredients: for the dough & # 8211 80 ml of cold water, a teaspoon of salt, 50 g butter, 200 g flour for filling & # 8211 350 g feta, 3 onions + 3 green onions, two tablespoons chopped dill, 4 tablespoons chopped parsley, half a teaspoon pepper, two teaspoons coarse salt, 400 g frozen spinach, 50 g long grain rice, 120 ml olive oil, butter for greased tray and an egg for greased pie.

Preparation: a dough is made from flour mixed with salt, in which cold diced butter is added. Mix well with your fingers until small lumps form, like peas. Add ice-cold water and knead again until a soft dough forms, which is refrigerated in foil for an hour. Then heat the oven to 180 degrees and grease a round pie pan with butter. Divide the dough into two equal parts. One is spread with your fingers in the pan and baked for 20 minutes. Meanwhile, prepare the filling. Heat the oil in a pan over medium heat and brown the finely chopped onion. Add the rice and cook for 2-3 minutes. Add the spinach and simmer over medium heat for 10 minutes. It is then left to cool in a strainer to drain the water. Season with salt and pepper, add the greens and crushed feta and mix. Place the filling over the baked dough. The other part of the dough is spread on the table lined with flour in a disc large enough to cover the tray and is placed on top of the filling, pressing the edges so that it closes like a lid. Grease with beaten egg and bake in the oven for 40 minutes or until golden brown. Cut after cooling.

Garides tourkolimano (pan shrimp)

Ingredient: 250 g thawed and cleaned shrimp, a tablespoon of olive oil, 4 cloves of garlic, a large tomato, 4 green onions, half a cup of dry or semi-dry white wine, a teaspoon of Tabasco sauce, a teaspoon of oregano, a quarter cup of fresh mint and basil, salt, pepper, a cup of crushed feta, a handful of parsley.

Preparation: heat the oil in the pan and fry the shrimp for two minutes on both sides. Add the crushed garlic and cook for another minute. Then add the chopped onion and tomato and cook for 4 minutes. Add wine, oregano, hot sauce, salt and pepper. Boil everything for about 5 minutes. Remove the pan from the heat and add the feta, then the chopped parsley, mint and basil.

Kourabiedes (butter cookies)

Ingredient: 340 g flour, 250 g butter, 125 g, unsalted almonds, fried and ground, 3 sachets of vanilla sugar, two egg yolks, 300 g powdered sugar.

Preparation: melt the butter and leave to cool, then mix well with the vanilla sugar and add the yolks one by one, mixing after each one. Mix the flour and ground almonds and add slowly, with a spoon, to the composition of butter and eggs. Mix until hardened, then knead by hand. If the dough is too soft, add a little more flour. The final composition must be strong enough to be shaped into cookies like crescents. They are placed in a tray on baking paper and baked at 175 degrees for about 30 minutes. Take them out of the pan while they are hot, place them on a plate and dust them with plenty of sugar.

Xerotigana (honey spirals)

Ingredients: for the dough & # 8211 1 kg flour, an egg, a cup of milk, water, half a cup of Greek brandy (tsikoudia), oil for frying for syrup & # 8211 two tablespoons of honey, a glass of sugar, a glass of water, a handful of ground almonds for decoration & # 8211 cinnamon.

Preparation: put the flour in a bowl, add a little water, egg, milk and brandy. Knead until a thick dough is obtained, which is left to rest for two hours. Then it is spread on a very thin sheet and cut with a roller into strips 3-4 cm wide. They are twisted like spirals and fried in very hot oil until golden brown. They are taken out and drained. For the syrup, put the water in a kettle, add the sugar and leave it on the fire for 10-15 minutes or until the syrup thickens. Leave to cool slightly, then add honey and almonds and mix. Immerse the spirals in syrup, place on a plate and powder with sugar.


Pastitsio & # 8211 Greek pasta in the oven

Pastitsio is a well-known traditional Greek recipe, which you can find all over Greece. It is also known as & ldquolasagna Greek & rdquo, because the recipe is very similar to Italian lasagna, the main difference being the shape of the pasta used.

The authentic Pastitsio recipe contains lamb and Bechamel sauce, combined with pasta and then put in the oven to get a filling and tasty food.

One of the most important details of this recipe is the composition of meat with sauce (or its vegan / fasting version, which I made in such a way as to imitate the original as well as possible), because it must contain the ideal combination. of spices such as cinnamon, cumin, garlic powder, nutmeg, salt and pepper. Bechamel sauce must be very creamy and fine to perfectly complement the meat combination.

If you want to prepare the authentic version of pastitsio, you must know that there are some steps that must be followed exactly. First you need to prepare the mixture of meat and Bechamel sauce. The base layer should consist of cylindrical pasta, which the Greeks usually mix with feta cheese to give an even more delicious taste to the whole dish. This first layer is followed by a layer of a mixture of lamb, veal or even beef and a combination of spices (such as cinnamon) and tomatoes. Then add another layer of pasta and finish with a layer of creamy Bechamel sauce. You can also add cheese or cheese on top for an even tastier result and you have to serve everything while it is hot. The Greeks usually serve pastitsio with a salad, for extra freshness.

For vegan / fasting version of this recipe we followed the steps mentioned above but we replaced the minced lamb with a mixture of healthy vegetables: carrots, lentils, tomatoes and, of course, authentic spices for pastitsio, such as cinnamon and nutmeg. Vegan Bechamel Sauce it is very easy to do. I made it from vegan butter, vegetable milk, flour and tofu. I used rigatoni pasta to get a look as close as possible to the original Pastitsio recipe.

You probably already know that I'm a big fan of baked pasta and a casseroles in general, because it seems to me that they are a very advantageous dish, given the fact that, although you have to spend a little more time in the kitchen, you will get a large amount of food.

Pastitsio is perfect for meal prep & ndash you can prepare a large tray on the weekend, which you can then cut into pieces to keep in pans in the refrigerator for the next few days. This way you will have ready portions for lunch or dinner, which you can even take with you at school or work.

I promise you that this vegan pastitsio recipe will impress you with its unique blend of flavors and textures. The taste is very similar to that of the original recipe and surely the most capricious will appreciate it!
