How to prepare Easter with cottage cheese?

First we will swell the raisins in hot water mixed with a tablespoon of rum, then we will take care of the dough. Beat the butter with a mixer until fluffy, then add the sugar and egg yolk. Mix well, then turn off the mixer and add sifted flour with baking powder.

Mix everything with a wooden spoon, then pour the milk. Knead the dough for about 5 minutes, then shape it into a ball and put it in the fridge for 2 hours. After the time has passed, transfer the dough to the worktop, sprinkled with flour and spread in the form of a round sheet.

Then put the dough in a cake pan greased with 20 gr butter. Now we can take care of the filling. We break the eggs and separate the egg whites from the yolks. Rub the yolks with the sugar until they turn white, then add 2 tablespoons of flour, well drained whey cheese and grated peel of a lemon.

Beat the egg whites a little salt until they form a hard foam. Then add the foam to the mixture of yolks and cheese. Mix well and put half of the cheese filling over the dough in the tray. Sprinkle the raisins on top and then add the rest of the cheese.

Put the tray in the preheated oven at 180 degrees for about 45 minutes. When it is ready, take it out of the oven, but leave it in the tray to cool. Good appetite!
