First and foremost we put three chopsticks in the cold water. Then we take a piece of chicken breast, place it on baking paper or transparent film, cover and lightly beat with the hammer for the slices, to get the fairly transparent slices ...

Separately, cut the parsley, basil, garlic (cleaned) as small as possible, put them in a bowl, add a little salt, ground pepper and a tablespoon of oil. Mix well the ingredients with which we will flavor the chicken breast slices, grease the breasts well, add the slices of pressed ham on top, which I beat a little with a hammer (we can replace the ham with thin slices of kaiser).

Now we roll as tightly as we can the chest slices, we get small rolls, which we cut about three centimeters, then with the stuffed part at the top / bottom, we put the skewer sticks in the rolled pieces, and with the brush dipped in oil , grease the skewers on all sides. We place them on the hot grill well and turn on all sides, until the meat is fried to our taste.

We serve hot skewers, as a second course.

Method of preparation

Turkey breast steak

In a pressure cooker, heat the olive oil and the spices. Add the flattened pepper

Veal fillets with vegetable garnish.

Season the meat with thyme, salt, pepper and 3 cloves of finely chopped garlic and put in the fridge.

2 pieces chicken breast (or boneless thighs)
80 ml olive oil
juice of 1 lemon
1 rosemary thread
1 tablespoon full harissa
1 teaspoon salt
1/2 teaspoon turmeric
1/2 teaspoon pepper

Servings: 3 (10 skewers)

Preparation Chicken skewers

  1. Cut the chicken breast into cubes or strips slightly thicker than a finger.
  2. Place the meat in a bowl. Mix the rest of the ingredients in a cup and pour over the meat. Mix well to cover the marinade. Refrigerate for at least 3 hours.
    * you can chop the rosemary in the marinade if you really like the taste, if not, put the whole twig, it will only give the marinade aroma
  3. Place the meat on skewer sticks as seen in pictures 2 and 3. Do not throw the marinade. Heat the grill well.
  4. Place the skewers on the grill and leave for 10 minutes (on the electric grill). Then grease the skewers with the remaining marinade and then turn them over. As soon as you turn them, grease them on the other side as well. Let it fry for another 10 minutes. Grease the skewers with marinade and turn them on the side, 2 minutes on each side.
  5. Serve immediately with harissa for those who want more spicy skewers and a assorted salad.

2. Skewers from meat cubes

3. Skewers from meat strips

7. Fry them on the other side as well

8. Rosemary that donated leaves for marinade

9. And the basil did not contribute to the skewer, but I asked him not to be upset

Chicken skewers with mint

One of the best foods if you are on a diet is chicken breast, which is also very popular with children. It is versatile, you can fry it, boil it, steam it, bake it or bake it and it can be used in soups, appetizers or main course.
Chicken skewers with mint it has a pleasant aroma and I recommend them if you want a change from the usual ways in which you cook chicken breast. You can choose a garnish of rice or steamed vegetables.
If you use wooden sticks, they must be soaked in water beforehand, otherwise they will burn. I use metal skewer sticks.

Method of preparation

Chicken ciulama with mushrooms

Cut the breast into cubes, season and lightly fry until it changes color. Separated

Poultry liver stew

Washed liver, put it in the fridge, in a bowl of milk for 30 '. Chop the onion, garlic

The chicken breast is cut into pieces of equal size, about 2.5 cm.
Squeeze the lemon, put in a bowl with the garlic powder, finely chopped parsley, salt and pepper.
Add the chicken pieces and leave to marinate for 2 hours or overnight.

They are placed on skewer sticks. If you use wooden sticks, they must be soaked in water beforehand.
Make the skewers on the grill or even on the flame from the stove.
Serve with a salad or your favorite garnish. We served it with a couscous salad.

Re: Chicken skewers

Ioana, I really like your skewers, but I wonder if the chicken doesn't come out too dry? Maybe the fact that marinated ointments moisturize their chicken breast (which is a bit bland of its kind)

P.S put some water on the basil and do not leave it in the sun for more than three to four hours a day as it loses its aroma

Ioana 8 years ago - 16 June 2009 07:55

Re: Chicken skewers

the chest does not come out soaked, the fact that it is kept in the marinade and then constantly greased helps. the skewers come out "wet"
boneless thighs can also be used, they really don't dry on the grill, but I used chicken breast especially because it's more difficult from this point of view.

I keep the basil under a table, not in the direct sun, I only took it out for pictures.
Should I water it more often or keep the soil moist? I wet it in the morning, but with a little water. that's how I noticed that he likes it, the more I watered it, the more it didn't grow, when I decreased the amount of water it blossomed and suddenly increased.

Re: Chicken skewers

Yes, Ioana is good to water it in the morning (or evening) with a little water! It's just that in the picture the ground seemed very dry

Ioana 8 years ago - 16 June 2009 12:24

Re: Chicken skewers

Oh, that's why you said I wet it now I got caught. I wet it, but the soil is very fine, I took it from the gardens that can be seen in the background of the pictures and as it withers a little, it cracks and looks like this. but in the tray below you can see the moisture, I think it's enough.

Re: Chicken skewers

Ioana, I would ask you nicely if you could add "That Greek soup" on the site. It's very tasty.

Re: Chicken skewers

pls. how do you manage to have such a beautiful rosemary? I took the plant twice and it dried every time.

Ioana 8 years ago - 11 August 2009 09:58

Re: Chicken skewers

I keep it in full sun, the balcony on which it is placed has sun almost all day and I wet it in the morning with quite a lot of water. I noticed how long I kept it in the shade that a few leaves began to dry. I quickly put him back in the sun and he recovered. I haven't sprayed it with anything so far. the basil was attacked by some black lice (I saved it with tobacco water) but they did not attack the rosemary.

Re: Chicken skewers

thank you! I knew the one with the tutu water for puree from an agronomist, but with the rosemary I didn't succeed at all. so everything is light, the sun!

Re: Chicken skewers

Trying to leave your chicken in spicy yogurt instead of marinade is a delight

Re: Chicken skewers

In what kind of soil did you plant rosemary.

Ioana 7 years ago - July 30, 2010 11:44

Re: Chicken skewers

I bought it from the market, ready planted in pots, but I saw that it is a sandier soil and has even a few larger pebbles through it.

Re: Chicken skewers

I'm getting ready to make skewers today (because I feel like it.), But with small modifications: instead of harissa I put chili powder and granulated garlic and instead of turmenic (I can't find it anywhere) I can put curry, right?
I don't have an electric grill and I want to make them on the grill pan or does the steam grill pot work better, considering that I have to grease them with marinade? If I make them in the grill pan, do I have to keep the sticks in the water so that they don't burn? Kiss you

Ioana 7 years ago - 4 August 2010 11:31

Re: Chicken skewers

lust? you were somehow recently on May 1st
I say that on the steam pot they will do very well and will not dry and you can grease them freely with marinade without burning.
if you still choose the grill pan, you don't have to put the sticks in the water, as they are made quickly from chicken and do not start to burn. go curry instead of turmeric, it will give them a good aroma in addition to color

I thought that's where your thought escapes, but on the other hand I thought that you think I did my mission on earth. Come work, you have to catch up with me.

Re: Chicken skewers

Super good came out! I made them on the steam grill pot, but I think I left them a little too long, they seemed a little dry, although I gave them several times with marinade. I will repeat them soon and then I will try on the grill pan.

Ioana 7 years ago - 5 August 2010 12:07

Re: Chicken skewers

if you used chicken breast it dries faster. I always leave them until it seems to me that they are only a little over half done (that is, my eyes tell me that they should be left and I hardly refrain from leaving them for a while) and then they come out just right, juicy. as well as the chicken breast grill.
